Stilton and Walnut Tart

Tip ~ If you have a food processor, use the metal slicing blade to quickly and thinly slice the onions, this not only saves time but gives a better result to the tart.
Ingredients
600g / 1lb 5oz onions
1 tablespoon balsamic vinegar
375g pack ready rolled puff pastry
175g / 6oz Stilton
50g pack walnut pieces
Method
- Preheat the oven to 200C, Gas mark 6 / fan oven 180C.
- Peel the onions and thinly slice. Heat 3 tablespoons of olive oil in a large frying pan, add the onions and fry until softened and lightly browned, stirring occasionally. This will take about 10 minutes.
- Splash in the vinegar, season, then cook for a further 5 minutes, until lightly caramelised. Leave to cool while you prepare the pastry.
- Unroll the pastry and use to line a 23 x 33cm / 9 x 13 inch shallow oblong tin.
- Spread over the onions, then crumble the stilton on top and scatter with walnuts.
- Bake for 15 - 20 minutes until the pastry is crisp and golden and the cheese has melted.
- Cool for 5 minutes before serving, cut into squares.
