Goats Cheese, Red Onionand Thyme Tart

Ingredients
500g / 1lb 2oz red onions, thinly sliced
2 tablespoons fresh thyme leaves
500g / 1lb 2oz puff pastry
100g / 4oz goat's cheese
40g / 1 ½ oz black olives, sliced
Method
- Preheat oven to 220C, Gas mark 7.
- Heat 4 tablespoons of olive oil in a large frying pan, add the onions and cook over a gentle heat for 12 - 15 minutes.
- Add the thyme leaves, season well and remove from the heat.
- Meanwhile, roll out the pastry on a lightly floured surface and cut into a 23cm x 18cm (9inch x 7inch) rectangle.
- Transfer the pastry square onto a large baking sheet.
- Spread the onion mixture over the pastry in an even layer up to 1 ½ cm / ½ inch away from the edge.
- Crumble over the goat's cheese and sprinkle over the olives.
- Bake for 20 - 25 minutes, or until the pastry has risen and is lightly golden brown.
- Serve warm or cold.
