Pesto and Potato Tart

Tip ~ This makes a great change from pizza for a light supper or lunch.
Ingredients
400g new potatoes, very thinly sliced
1 sheet ready rolled puff pastry
2 - 3 tablespoons pesto
3 tablespoon freshly grated parmesan
Salt and pepper
1 egg beaten
Small handful fresh basil leaves
You will need : a baking sheet
Method
- Heat the oven to 190C, fan 170C, gas 5.
- Simmer the potato slices for 2 minutes and drain.
- Put the pastry sheet onto a baking sheet and score a border 1cm from the outer edge.
- Spread a thin layer of pesto over the base and sprinkle the parmesan over.
- Lay the potato slices on top. Season to taste.
- Glaze the pastry borders with the beaten egg.
- Bake for 25 - 30 minutes until the pastry is golden, crisp and the potatoes are tender.
- Sprinkle with basil to serve.
