Goats Cheese Parcels

Tip ~ Any firm goats cheese works well in this recipe.
Ingredients
75g/3oz goats cheddar, cut into ½ inch cubes
1 tsp chopped fresh thyme
1 tsp chopped fresh marjoram
1 garlic clove, finely chopped
About 2 tsp olive oil
40g/1 ½ oz unsalted butter
2 large sheets filo pastry, thawed if frozen
Salt and freshly ground black pepper
Good quality chutney to serve - optional
Method
- Preheat the oven to 200C, 400F, Gas 6 (fan oven 180C ).
- Place the goats cheese Cheddar in a bowl with the thyme, marjoram and garlic. Add enough olive oil to just bind the mixture together. Season to taste.
- Melt the butter in a small pan or the microwave. Leave to cool a little. Brush each filo sheet on both sides with the melted butter. Lay the buttered sheets of filo on top of each other and cut in half, then cut each half into three to make six even sized rectangles.
- Divide the cheese mixture amoung the filo rectangles, placing a small mound in the centre of each one.
- Carefully roll up into a spring roll shape to enclose the filling.
- Put on a non-stick baking sheet a little way apart. Brush with the remaining butter and bake for about 4 minutes or until the pastry is crisp and golden brown.
- To serve arrange on plates and serve with spoonfuls of chutney to the side. Serve at once.
