Tomato and Goats Cheese Crumble

1kg / 2lb 4oz ripe tomatoes, preferably a mixture including a punnet of cherry tomatoes

5 tbsp olive oil

225g / 8oz goat's cheese, firm or soft

50g / 2oz pine nuts

100g / 4oz fresh white breadcrumbs

50g / 2oz parmesan, freshly grated


  • Preheat the oven to 190C, gas mark 5.
  • Chop the tomatoes, keeping the cherry ones whole. Heat 2 tbsp of the olive oil in a pan, add the chopped tomatoes season and cook for 10 minutes until softened, stirring occasionally. Remove from the heat and stir in the cherry tomatoes.
  • Spoon half the tomatoes into a 1 litre / 1 ¾ pint ovenproof dish and crumble half the goat's cheese on top. Repeat the layers.
  • Heat 3 tbsp of olive oil in a frying pan and lightly fry the pine nuts and breadcrumbs.
  • Remove from the heat and stir in half the parmesan.
  • Scatter over the tomatoes and cheese and top with the remaining parmesan.
  • Bake for 20 - 25 minutes, until golden.
  • Serve with a green salad or vegetables.
