Tomato and Goats Cheese Crumble

Ingredients
1kg / 2lb 4oz ripe tomatoes, preferably a mixture including a punnet of cherry tomatoes
5 tbsp olive oil
225g / 8oz goat's cheese, firm or soft
50g / 2oz pine nuts
100g / 4oz fresh white breadcrumbs
50g / 2oz parmesan, freshly grated
Method
- Preheat the oven to 190C, gas mark 5.
- Chop the tomatoes, keeping the cherry ones whole. Heat 2 tbsp of the olive oil in a pan, add the chopped tomatoes season and cook for 10 minutes until softened, stirring occasionally. Remove from the heat and stir in the cherry tomatoes.
- Spoon half the tomatoes into a 1 litre / 1 ¾ pint ovenproof dish and crumble half the goat's cheese on top. Repeat the layers.
- Heat 3 tbsp of olive oil in a frying pan and lightly fry the pine nuts and breadcrumbs.
- Remove from the heat and stir in half the parmesan.
- Scatter over the tomatoes and cheese and top with the remaining parmesan.
- Bake for 20 - 25 minutes, until golden.
- Serve with a green salad or vegetables.
