Asparagus Carbonara

Ingredients:
Knob of butter
1 small onion, chopped
2 garlic cloves, finely chopped
225g/8oz ham, cut into chunks
600g/1lb 5oz asparagus spears
2 eggs
142ml carton single cream
4 tablespoons freshly grated parmesan
85g/3oz fresh white breadcrumbs
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
Method:
- Melt the butter and cook the onion, garlic and ham for 5 - 10 minutes until golden.
- Meanwhile cook the asparagus in a pan of salted boiling water for 3 - 4 minutes until just tender. Drain.
- Whisk the eggs, cream and three tablespoons parmesan.
- Stir in the onion mixture and season.
- In a separate bowl, mix together the breadcrumbs, olive oil, parsley and remaining parmesan.
- Preheat the grill. Toss the asparagus with the cream mixture.
- Tip into a gratin dish and sprinkle over the breadcrumb mixture.
- Grill for 2 -3 minutes, until the breadcrumbs are golden and the carbonara sauce is hot.
