White Chocolate Bliss

Tips ~This dessert is quick to make and can be prepared 24 hours ahead.
Ingredients
225g / 8oz good quality white chocolate (i.e. Lindt), broken in pieces
450ml / 15floz double cream, lightly whipped
3 egg whites
75g / 3oz ratafia biscuits, coarsely crushed
75g / 3oz roasted hazelnuts, coarsely chopped
Method
- You will need a 2.2 litre / 4 pint shallow pretty bowl or serving dish.
- Carefully melt the chocolate in a bowl over a pan of gently simmering water, stirring occasionally (be careful not to let it get too hot or the chocolate will become grainy). Set aside to cool.
- Pour the melted chocolate into the whipped cream and carefully mix.
- Whisk the egg whites until stiff and fold into the cream mixture.
- Spoon half the cream mixture into the base of the bowl.
- Sprinkle over half the crushed biscuits and hazelnuts.
- Spoon over the remaining cream mixture, level the top and sprinkle over the remaining biscuits and nuts.
- Chill for an hour or so, but serve at room temperature.
