Spiced Orange and Yogurt Pudding

Ingredients
3 eggs, separated
125g / 4oz golden caster sugar
Pinch ground cinnamon
450g carton natural yogurt
Zest of 1 orange, plus juice of ½ an orange (about 75ml / 3floz orange juice)
25g / 1oz plain flour
50g / 2oz toasted flaked almonds
Crème fraiche and runny honey to serve
You will need: 1 x 23cm / 9inch roundshallow ovenproof dish
Method
- Preheat oven to 180C, gas mark 4.
- With a food mixer, whisk egg whites with half the sugar until they are white and fluffy and standing in peaks.
- In another bowl, add the egg yolks and remaining sugar and beat until pale and creamy.
- Then add the cinnamon, yogurt, orange juice and zest and the flour. Mix well to combine.
- Gently fold the egg whites into this mixture until evenly mixed.
- Spoon into a lightly greased shallow, ovenproof dish.
- Sit the dish in a roasting tin and pour hot water in until it comes half way up the dish.
- Put into the preheated oven and cook for about 40 minutes until golden brown.
- Scatter over the flaked almonds and serve with a dollop of crème fraiche and a drizzle of honey.
