Sparkling Fruit Jellies

Tip ~Variation: you could use cranberry juice rather than grape juice.
Ingredients
75cl bottle demi-sec or dry sparkling wine
300ml / ½ pint red grape juice
5 teaspoons powdered gelatine
125g / 4oz small seedless grapes, halved
225g / 8oz raspberries (or small strawberries)
You will need: 8 Individual glass dishes or wine glasses.
Method
1. Pour the sparkling wine into a bowl or large jug.
2. Put 4 tablespoons of the grape juice into a small pan, sprinkle over the gelatine and leave to soak for 5 minutes.
3. Heat very gently until the gelatine is completely dissolved.
4. Stir in the remaining grape juice, and then stir this mixture into the wine.
5. Divide the grapes and raspberries among serving glasses and pour in enough of the wine mixture to cover them and chill until just set. This ensures the fruit stays at the bottom of your glasses and does not float to the top.
6. Pour on the remaining wine mixture and chill for a further 3 - 4 hours until set.
