Ginger Nut Biscuits

Tip ~ This mixture can be kept wrapped in clingfilm for a couple of days until needed.
Ingredients
125g / 4oz self raising flour, sieved
1 tsp bicarbonate of soda
1 - 2 tsp ground ginger (depending on how gingery you like your biscuits)
2 tsp golden caster sugar
50g / 2oz butter
2 tbsp golden syrup
1 tbsp stem ginger, very finely chopped
You will need: a baking sheet lined with baking parchment
Method
- Preheat oven to gas mark 5 / 190C / 180C fan oven.
- In a large bowl, mix together the flour, bicarbonate of soda, ground ginger and caster sugar.
- In a small saucepan, gently melt butter and syrup together, and then pour it into the flour mixture.
- Add the stem ginger and stir well to combine.
- Put in the fridge to rest for 20 minutes.
- Using a teaspoon, roll into balls and place on the baking sheet, leaving room for them to spread.
- Bake for 15 - 20 minutes until golden brown.
- Remove from the oven; allow to cool for 5 minutes before transferring to a cooling rack.
