Tip ~Ideal Winter or Summer, you could vary the fruit depending on the season, nectarines, kumquats and lychees would also work well.
Ingredients
125g / 4 ½ oz soft light brown sugar
3cm / 1 ¼ inch piece root ginger, peeled and roughly chopped
1 stick lemongrass, split lengthways and crushed
2 peaches, stoned and sliced
4 plums, halved, stoned and sliced
1 Comice pears, peeled, cored and sliced
6 apricots, halved and stoned
Method
- 1. Heat 250ml / 9floz water, the sugar, ginger and lemongrass in a saucepan. Stir until the sugar has dissolved.
- 2. Simmer gently for 5 minutes to reduce the liquid slightly, remove from the heat and allow to cool.
- 3. Strain the cooled syrup and pour over the prepared fruit.
- 4. Refrigerate until required.
- 5. Serve with fresh cream or crème fraiche.
