Chocolate Mousse with Amaretto

Tip ~ Use a good quality chocolate with a minimum of 70% cocoa soilds, this will give a richer chocolate flavour.
Ingredients:
225g/8oz good quality dark chocolate
75g/3oz butter
350ml/12floz double cream
2 large eggs
1 tablespoon Amaretto ( this is optional or you can use rum)
2 tablespoons clear honey
Chocolate curls to decorate
Method:
- In a bowl over some gently simmering water, slowly melt the chocolate and butter together then remove from the heat.
- In a separate bowl, semi-whip the cream (until soft peaks; not too stiff).
- In a third bowl whisk the eggs and honey until light and fluffy then fold in the Amaretto, melted chocolate mixture and cream - gently, so you don't lose too much air.
- Pour into some small wineglasses or serving dishes and leave to chill for at least an hour before serving.
- Decorate with chocolate curls if liked you could use a crumbled Flake bar.
