Chocolate Mousse Recipe


Chocolate and Ricotta Mousse

225g / 8oz ricotta cheese

5 tbsp maple syrup

50g / 2oz plain chocolate, melted

1 egg white

150ml / ¼ pint double cream

Ground cinnamon or cocoa powder, to sprinkle


  • Beat the ricotta cheese with 4 tbsp of the maple syrup until smooth.
  • Stir in the chocolate until evenly combined. Transfer to 4 small glasses.
  • Whisk the egg white until stiff. Whip the cream with the remaining maple syrup until stiff, then fold in the egg white.
  • Spoon the cream on top of the chocolate mixture and chill for 1 - 2 hours. Sprinkle with ground cinnamon or cocoa powder just before serving.
