Tip~ Freeze these delicious cakes without the icing, once defrosted make up the icing as directed in the recipe.
Ingredients
2 tablespoons coffee concentrate
1 tablespoon cocoa powder
225g / 8oz butter, softened
225g / 8oz caster sugar
4 eggs
Sieve together 225g / 8oz self raising flour and 1 teaspoon baking powder
For the frosting:
115g / 4oz milk chocolate
50g / 2oz butter, softened
3 tablespoons milk
175g / 6oz icing sugar, sieved
You will need: a shallow tin 18 x 28cm (7 x 11 inch), greased and lined with baking paper.
Method
- In a large bowl, blend together the coffee liquid and cocoa powder.
- Add all the remaining cake ingredients and using an electric hand mixer, mix together until well combined, this should take 1 - 2 minutes. It is important not to over beat the mixture.
- Spoon the mixture into the prepared tin, smooth the surface.
- Bake at Gas mark 4 / 180C, for 35 - 45 minutes until well risen and firm to the touch.
- Cool in the tin for 10 minutes and then turn out on a wire rack to cool completely.
- To make the frosting, melt the chocolate, butter and milk in a bowl set over a pan of simmering water.
- Remove the bowl from the heat and beat in the icing sugar until smooth.
- When cold spread over the top of the cake and cut into bars.
