Banana, Toffee and Pear Crumble

Tips ~ The crumble topping can be made in advance a stored in an airtight container in the fridge until required.
Ingredients
500g / 1lb 2oz firm pears, peeled, cored and cut into 5 - 6 slices each
1 tablespoon light muscovado sugar
1 tablespoon lemon juice
4 bananas, thickly sliced
4 heaped tablespoons dulce de leche
For the topping:
100g / 4oz plain flour
50g / 2oz butter
50g / 2oz porridge oats
25g / 1oz walnuts chopped
50g / 2oz light muscovado sugar
3 tablespoons sunflower oil
You will need: a large shallow ovenproof dish
Method
- Place the pears in a saucepan with the sugar and lemon juice. Cover and cook gently for 5 - 10 minutes, until just tender, then remove the lid and continue to cook for 2 - 3 minutes.
- Place the bananas in an ovenproof dish. Top with the dulce de leche, spreading it all over. Tip over the pears and any juices.
- To make the topping: sift the flour into a bowl and rub in the butter, then stir in the oats, nuts and sugar. Add the oil and combine well.
- Spread this mixture over the pears and press down gently.
- Bake in an oven preheated to 200C, Gas Mark 6 for about 45 minutes or until golden brown.
- Leave for at least 10 minutes, then serve warm with oodles of custard.
