Tips ~ Comice or Conference pears will both do nicely here, as long as they are just on the point of ripeness.
Do ahead - top the pears with the biscuit filling up to 3 hours before baking. Store covered in the fridge until needed.
Ingredients
6 just-ripe pears, halved lengthways
1 tbsp lemon juice
12 ginger-nut biscuits, fairly well crushed
6 nuggets stem ginger, finely chopped
110g / 4oz butter, melted plus extra for greasing
1 large egg yolk
6 tbsp syrup from the stem ginger jar
Method
- Preheat the oven to 200C, gas mark 6.
- Remove the cores from the pears, and then brush the cut sides with lemon juice.
- In a bowl, mix the biscuits, chopped ginger, melted butter and egg yolk together. Use for filling the pear halves and mound up a little in the middle, taking it to the edges.
- Arrange in a buttered ovenproof dish just large enough to fit the pears snugly side by side.
- Drizzle with the ginger syrup and bake for 30 - 40 minutes, until the pears are cooked through and the topping has crisped up a little.
- Served on warmed dessert plates with some cream or a scoop of ice cream
