Tip ~ This dessert looks great decorated with fresh blackberries and fresh mint on top.
Ingredients:
500g / 1lb cooking apples, peeled, cored and sliced
250g / 8oz blackberries
50g / 2oz soft brown sugar
284ml / 10floz double cream, whipped
Method:
- Place the apples, blackberries and sugar in a saucepan.
- Cover and simmer gently for 15 minutes until soft.
- Allow to cool, then work in a food processor to make a puree. Sieve to remove the pips.
- Fold the cream into the puree.
- Spoon into individual dishes and chill.
