Fruity North African Salad

Ingredients
175g / 6oz brown basmati rice
1 orange, juice only
1 tablespoon honey
410g / 14oz tin chickpeas, drained
50g / 2oz dried cranberries
50g / 2oz sultanas
50g / 2oz dates, chopped
2 large tomatoes, skinned and chopped
1 green pepper, finely chopped
3 - 4 tablespoons roughly chopped fresh coriander
Method
- Cook the rice according to packet instructions, drain, and place in a large bowl.
- Whisk the orange juice and honey together, and pour over the warm rice. Set aside to cool.
- Add all the remaining ingredients to the bowl after a few minutes and mix well.
- Allow the salad to stand for half an hour so that the dried fruit has a chance to plump up.
- Serve chilled. This salad is also nice served in pitta breads with a dollop of natural yogurt.
