Fresh Herb Dip

Ingredients
1 small bunch fresh parsley
3 sprigs fresh basil
2 sprigs fresh thyme
1 sprig fresh tarragon
1 small bunch fresh chives
1 x 125g carton full fat cream cheese
1 x 200ml carton half fat crème fraiche
1 - 2 small garlic cloves, crushed
6 tbsp 'light' low calorie mayonnaise
A pinch of caster sugar
2 tbsp lemon juice
Salt and pepper
Method
- Take the stalks off the herbs and discard. Chop the chives finely.
- Put the parsley, basil, thyme and tarragon in the processor and process until finely chopped.
- Add the cheese, crème fraiche, garlic, mayonnaise, sugar and lemon juice and whizz again until smooth.
- If you do not have a processor, chop the herbs finely and mix in a bowl with the other ingredients until evenly combined. Season to taste.
- Just before serving, stir in the chives.
- Serve with breadsticks, crudités or tortilla chips.
