350g / 12oz white cabbage

1 large carrot peeled

1 onion, peeled and finely chopped

2 - 3 sticks celery, finely sliced

3 tbsp chopped parsley

150ml / ¼ pint mayonnaise

Salt and pepper

Paprika to sprinkle


1. Coarsely shred the cabbage and grate the carrot, using a food processor.

2. Combine the cabbage and carrot in a large bowl with the onion, celery and chopped parsley.

3. Add the mayonnaise and season generously.

4. Toss well to mix.

5. Cover and leave to stand for 2 - 3 hours before serving to allow the flavours to mingle.

6. Sprinkle the coleslaw with paprika and garnish with parsley to serve.
