50g / 2oz beef dripping (or oil if you prefer)

700g / 1 ½ lb onions, peeled, halved and thinly sliced

4 garlic cloves, peeled and crushed

2 tbsp light brown sugar

3 tbsp plain flour

600ml / 1 pint light ale

300ml / ½ pint beef stock

1 bay leaf

2 large fresh thyme sprigs

Salt and pepper

2 tbsp wine or cider vinegar

Chopped parsley to garnish
