2 tablespoons olive oil

4 chicken thighs

2 chicken breasts cut in half

2 red onions, sliced

1 large red pepper, deseeded and sliced

2 garlic cloves, crushed

250g / 9oz chorizo, diced

1 x 400g can chopped tomatoes

250ml / 8floz chicken stock

150ml / ¼ pint dry white wine

1 rounded teaspoon smoked paprika

1 pinch saffron (optional)

50g / 2oz raisins (optional)

2 strips orange zest

1 sprig fresh thyme

Approx. 20 mixed olives

1 x 400g can chickpeas, drained and rinsed

2 tablespoons fresh parsley, chopped

Salt and pepper
