675g / 1 ½ lb haddock fillets, skinned

1 onion, sliced

1 clove garlic, crushed

25g / 1oz butter

Marinade:

1 tbsp lemon juice

1 tsp honey

Salt and pepper

2 tsp curry powder

300ml / ½ pint natural yogurt

Generous pinch turmeric

1 tsp ground coriander

2 tsp grated fresh root ginger

Fresh coriander to garnish
