Ingredients

1 tablespoon olive oil

1 onion, finely chopped

1 bulb fennel, trimmed and chopped

1 red chilli, deseeded and finely chopped

2 cloves garlic, finely chopped

1 glass white wine or vermouth

400g can chopped tomatoes

300ml / ½ pint fish or vegetable stock

700g / 1 ½ lb mixed (skinless) fish fillets and seafood

200g pack large prawns with tails intact (optional)

Chopped parsley to garnish

Salt and pepper

You will need a large flameproof casserole dish or saucepan.
