Tip ~ A layer of leeks that have been thinly sliced and lightly fried in some butter, makes a nice addition to the other layers in this recipe.
Ingredients
700g / 1lb 9oz potatoes, skin on, thinly sliced
85g / 3oz butter, melted
1 teaspoon celery or fennel seeds
Salt and pepper
700g / 1lb 9oz skinless salmon fillet
3 tablespoons single cream
Chopped flat leaf parsley, to garnish
Method
- Preheat oven to 200C, (Fan oven 180C), Gas 6.
- Par-cook the potatoes in water or stock for 4 - 5 minutes; the slices must remain whole. Drain and refresh under cold water.
- Line a buttered shallow 7 x 10 inch ovenproof dish with half of the potatoes, brushing with butter and sprinkling with celery or fennel seed, salt and pepper.
- Cut the fish into chunks and lay over the potato, season and drizzle over the cream.
- Top with the remaining potato, seasoning as before.
- Bake for 40 minutes until the topping is crisp.
- Garnish with parsley.
