1 medium leek, roughly chopped

2 sticks celery, cut into ¼ inch dice

1 medium carrot, cut into ¼ inch dice

1 x 400g can chopped tomatoes

1 ½ pints vegetable stock

1 x 400g can cannelloni beans, drained and rinsed

2 tablespoons redcurrant jelly

2 tablespoons tomato puree

4 tablespoons fresh breadcrumbs

Salt and pepper

Chopped fresh parsley, to garnish
