Tip ~ You could use thick cod loin fillets for this recipe instead of the salmon.

Ingredients

Grated rind and juice of 2-3 lemons

50g / 2oz couscous

Salt and black pepper

4 skinless, boneless salmon fillets, each about 175g / 6oz each

25g /1oz plain flour

1 egg, beaten

175g /6oz stoned mixed olives

2 anchovy fillets

5 tbsp olive oil

1 tbsp capers

2 tbsp chopped fresh flat leaf parsley

1 garlic clove, peeled and sliced

450g /1lb tomatoes, chopped

Method
