Tip ~ A popular cake with children, great for school lunchboxes!


225g / 8oz self raising flour

115g / 4oz soft margarine

1 large egg

115g / 4oz mixed dried fruits

1 - 2 tablespoons milk


  • Pre heat oven to 200C, 400F, Gas 6. Line a 12 pan bun tin with paper cake cases.
  • Sift the flour into a bowl and rub in the soft margarine. Beat the egg, add to the flour mixture with the remaining ingredients and mix well. Divide the mixture evenly between the cake cases.
  • Bake the cakes for 15 - 20 minutes until they are well risen, golden brown and firm to the touch, remove from the oven and cool on a wire rack.


For a crunchy topping, sprinkle with a little Demerara sugar, before putting the cakes in the oven.

The mixed dried fruit can be replaced with:

  • 1 ¾ oz chopped walnuts,
  • 1 small dessert apple, peeled and grated and ½ teaspoon cinnamon,
  • grated rind of half and orange,
  • 2 ¾ oz chopped ready to eat apricots and 1 ¾ oz chopped glace cherries.
