Tip ~ You could use alternative fruit to the peaches suggested, nectarines or plums would also work well.
Ingredients
125g unsalted butter, softened plus extra for greasing
200g golden caster sugar
2 eggs, beaten
1 teaspoon vanilla essence
200g self raising flour
50g ground almonds
200ml Greek yogurt
2 peaches, halved, stoned and sliced
3 tablespoons peach jam (or similar i.e. apricot)
Method
- Preheat the oven to 180C, Gas mark 4.
- Cream the butter and sugar until light and fluffy. Gradually beat in the eggs, vanilla essence, flour and ground almonds.
- Fold in the Greek yogurt.
- Line a 12 hole muffin tin with muffin paper cases.
- Spoon the cake mixture into the cases, so that they are two thirds full, and then place a couple of peach slices onto the top of each one, lightly pressing the fruit into the mixture.
- Bake for 20 - 25 minutes until lightly golden and firm to the touch.
- While still warm, spread some peach jam over the peaches to glaze.
