Marmalade Gingerbread
A simple no fuss cake with a minimum of preparation, this Marmalade Ginger Cake is a great traditional tea time favourite.

Tip ~ You could decorate this cake with glace icing and grated zest of an orange for a special occasion.
Ingredients
75g / 3oz butter
150g / 5oz golden syrup
225g / 8oz marmalade
225g / 8oz self raising flour
4 tsp ground ginger
2 tsp ground cinnamon
1 egg, beaten
2 tbsp milk
Method
- Preheat an oven to 170C, Gas mark 3.
- Butter the sides of a 20cm / 8 inch cake tin and base line with greaseproof paper.
- In a saucepan melt the butter, golden syrup and marmalade on a medium heat, stirring to combine. Allow to cool for a minute.
- Sieve the flour, ginger and cinnamon into a bowl. Add the beaten egg and the milk to the slightly cooled mixture, and pour this into the dry ingredients, folding it in to combine.
- Pour the mixture into the prepared cake tin and place in the preheated oven. Cook for 40 - 50 minutes, or until a skewer inserted into the centre comes out clean.
- Cool in the tin for 10 minutes, then remove to a rack.
