Tip ~ This cake has a wonderful rich and dark flavour.
Ingredients
8oz / 225g wholemeal flour
½ tsp bicarbonate of soda
2 tsp ground ginger
4oz / 100g butter or margarine
4oz / 100g soft brown sugar
4 tablespoons black treacle
2 tablespoons milk
1 large egg
You will need a 2lb / 900g loaf tin.
Method:
- Stir together the flour, bicarbonate of soda and ginger in a large bowl.
- Melt the butter in a saucepan with the sugar and treacle.
- Cool slightly, then beat in the milk and egg.
- Stir the liquid ingredients into the flour. Beat well, then turn into a greased and base lined tin.
- Bake in the oven at 180C, Gas Mark 4 for 40 - 45 minutes, until well risen and firm to the touch. Cool on a wire rack.
