Old Fashioned Ginger Cake

Tip ~ This cake has a wonderful rich and dark flavour.


8oz / 225g wholemeal flour

½ tsp bicarbonate of soda

2 tsp ground ginger

4oz / 100g butter or margarine

4oz / 100g soft brown sugar

4 tablespoons black treacle

2 tablespoons milk

1 large egg

You will need a 2lb / 900g loaf tin.


  • Stir together the flour, bicarbonate of soda and ginger in a large bowl.
  • Melt the butter in a saucepan with the sugar and treacle.
  • Cool slightly, then beat in the milk and egg.
  • Stir the liquid ingredients into the flour. Beat well, then turn into a greased and base lined tin.
  • Bake in the oven at 180C, Gas Mark 4 for 40 - 45 minutes, until well risen and firm to the touch. Cool on a wire rack.
