Tip ~ If you do not like dark chocolate, substitute with milk chocolatechips, they are equally as good.


90g butter

110g unrefined golden caster sugar

1 teaspoon vanilla extract

220ml sour cream

1 egg, lightly beaten

220g self raising flour

½ teaspoon baking powder

100g dark chocolate chips


Preheat the oven to 190C, Gas Mark 5.

  • Line a 450g loaf tin with baking parchment and set aside.
  • Start to melt the butter in a saucepan. When it is half melted, remove from the heat and stir until fully melted. Stir in the sugar, vanilla extract, sour cream and egg.
  • Sieve the flour and baking powder together, then add to the wet mix and stir until just blended.
  • Fold in the chocolate chips, and then pour the batter into the lined loaf tin.
  • Bake for 45 - 50 minutes until the cake springs back when lightly pressed in the centre.
