Tip ~ the family will love this, you can also use up any overripe bananas. Why not add icing as a topping!
Ingredients
225g / 8oz plain flour
1 teaspoon bicarbonate of soda
½ teaspoon cream of tartar
Salt
100g / 4oz butter or hard margarine
175g / 6oz caster sugar
1 teaspoon lemon juice
3 tablespoons milk
2 bananas, mashed
1 teaspoon grated lemon rind
2 eggs, lightly beaten
Granulated or Demerara sugar to finish
Method
- You will need a loaf tin measuring 23 x 13cm (9x5 inches), well greased and lined with baking paper.
- Sift the flour, bicarbonate of soda, cream of tartar and a pinch of salt into a mixing bowl.
- Cut the butter or margarine into the flour and rub into a breadcrumb consistency.
- Mix in the sugar thoroughly.
- Add the lemon juice to the milk, this will curdle slightly but do not worry at this stage.
- Mix the mashed banana with the lemon rind and then stir in the curdled milk and beaten eggs.
- Make a well in the flour mixture and mix in the banana mixture with a wooden spoon.
- Turn into the prepared tin. Smooth the top and dredge with the sugar.
- Bake the cakein a preheated oven: 180C / Gas mark 4, for 1 ¼ hours or until a skewer inserted in the middle comes out clean.
