Autumn Tomato and Sage Soup

Ingredients
1 tablespoon olive oil
2 onions, roughly chopped
1 red chilli, chopped
2.5cm / 1 inch piece root ginger, grated
10 tomatoes skinned, roughly chopped
500ml / 16floz tomato juice
2 eating apples, peeled, cored and roughly chopped
10 sage leaves, roughly chopped
Method
- In a large pan, heat the olive oil and add onions, chilli and ginger and cook until soft - don't allow onion to brown.
- Next add the chopped tomatoes and cook for about 10 minutes over a low heat.
- Pour in tomato juice and bring to the boil, then turn the heat down and allow to soup to simmer for a further 10 minutes.
- Throw in the apples and sage and cook until the apples are soft.
- Liquidise the soup to your preferred consistency.
- Return to a clean pan and season to taste with salt and pepper.
- Serve with crusty bread.
