Sweet Potato and Stilton Soup

Ingredients:
4 tablespoons butter
1 large onion, chopped
2 leeks, trimmed and sliced
175g/6oz sweet potatoes, peeled and diced
850ml/1½ pints vegetable stock
1 bay leaf
Black Pepper
150ml/5 floz double cream
150g/5 ½ oz Stilton cheese, crumbled
2 tablespoons finely crumbled Stilton cheese to garnish
Method:
- Melt the butter in a large saucepan and cook the onion and leeks until softened
- Add the sweet potatoes and cook for a further 5 minutes.
- Pour in the stock; add the parsley and bay leaf, season with pepper.
- Bring to the boil and simmer, covered for about 30 minutes.
- Remove from the heat and leave to cool. Remove the bay leaf.
- Transfer the soup to a food processor or use a hand held blender and blend until smooth.
- Stir in the cream and cook for a further 5 minutes.
- Gradually stir in the crumbled Stilton until melted (do not let the soup boil).
- Remove from the heat and serve garnished with finely crumbled Stilton.
