Paprika Pork with Potatoes and Spinach

Tip ~ Some sliced or cubed chorizo would enhance this dish with its smokey flavour and colour.
Ingredients
Olive oil
6 rind less rashers bacon, roughly chopped
1 red onion, sliced
600g pork steaks
1 tablespoon smoked paprika
2 tablespoons plain flour
½ cup dry white wine
400g can chopped tomatoes
3 large waxy potatoes, peeled and quartered
Salt and black pepper
150g fresh baby spinach leaves
Method
- Heat in a large saucepan, add a good glug of oil and add the bacon, fry until browned.
- Add the onion to the pan and cook gently for 5 minutes. Remove to one side.
- Add pork to the same pan and brown on both sides, add more oil if necessary. Remove and keep warm.
- Add paprika and flour to the pan and stir to form a smooth paste. Remove pan from the heat, add wine and stir until smooth.
- Return bacon, onion and pork to the pan, add the tomatoes and potatoes.
- Cover and simmer very gently for 35 - 40 minutes.
- Adjust seasoning with salt and pepper. Lastly stir in the spinach to wilt for a few minutes before serving.
