Ingredients
2 salmon fillets, each weighing 4 - 5oz (110g - 150g) each
4 sheets filo pastry
1 teaspoon grated fresh ginger
Grated zest and juice 1 lime
1 clove garlic, crushed
1 tablespoon chopped fresh coriander
1 small spring onion, finely sliced
1oz / 25g butter
Salt and pepper
Garnish: sprigs of coriander, 1 lime cut into quarters
You will need; a baking sheet
Method
- In a small bowl mix together the ginger, lime zest, garlic, coriander and spring onion, then stir in the lime juice.
- Melt the butter in a small pan.
- Lay 1 sheet of filo pastry on a flat surface, brush all over with melted butter, lay another sheet of filo on top and brush this lightly with more melted butter.
- Position one of the salmon fillets near to one short end of the pastry, season and sprinkle half the lime and herb mixture on top.
- Fold the short end of the filo pastry over the salmon, then fold the long edges inwards, continue to fold the pastry over the salmon to create a neat parcel.
- Wrap the other piece of salmon in the same way and when you are ready to cook, brush the parcels all over with melted butter. Place them on a baking sheet and bake in a preheated oven, 190C, Gas mark 5, for 20 - 25 minutes until the pastry is brown and crisp.
- Serve garnished with sprigs of coriander and wedges of lime.
