Salmon with Citrus Herb Crumb Topping

Ingredients
150g / 5oz fresh white breadcrumbs
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh flat - leaf parsley
Grated zest of 1 lemon and 1 lime, plus 1 tablespoon lime juice
25g / 1oz butter, melted
Salt and Pepper
4 salmon fillets, skinned (we can do this in class)
Method
Preheat oven to 190C / Fan 170C / Gas mark 5
1. In a bowl mix together the breadcrumbs, chives, parsley, lemon and lime zest the lime juice and the melted butter.
2. Season with salt and pepper.
3. Spread the breadcrumb mixture over the top of the salmon fillets, press down with your hands.
4. Place the salmon fillets onto an oiled baking tray and bake for 15 - 20 minutes until cooked though and the topping is golden brown.
5. Serve with wedges of lemon to decorate.
