Prawn Curry with Onion and Garlic

Tip ~ Make sure you fry the spices gently whilst stirring to prevent them from burning.
Ingredients
1 tablespoon vegetable oil
1 small onion, chopped
2 garlic cloves, chopped
2 teaspoons ground coriander
½ teaspoon ground ginger
1 teaspoon tumeric
½ teaspoon ground cumin
½ teaspoon chilli powder
2 tablespoons white wine vinegar
500g / 1lb peeled prawns
200ml / 7floz water
Chopped fresh coriander to garnish
Method
- Heat the oil in a large heavy based pan. Add the onion and garlic and fry gently for 4 -5 minutes, until golden and soft.
- Mix together the ground coriander, ginger, tumeric, cumin and chilli powder in a small bowl. Mix in the vinegar to make a smooth paste.
- Add the spicy paste to the onion mixture in the pan and then fry gently for a further 3 minutes.
- Add the prawns and stir gently with a wooden spoon, until they are well coated with the spices.
- Stir in the water and simmer over a gentle heat for 2 - 3 minutes.
- Serve garnished with fresh coriander and boiled rice.
