Halibut with a Horseradish Crust

Tip ~
Ingredients
2 x 175g / 6oz halibut steaks ( you could use either chunky cod or haddock fillets)
For the crust:
75g / 3oz unsalted butter, softened
3 tbsp breadcrumbs
1 tbsp horseradish sauce
½ tsp English mustard powder
1 tbsp flat leaf parsley, finely chopped
Salt and black pepper
A little oil to brush onto fish
Method
1. Preheat oven to 190C / 170C fan / Gas 5.
2. Place all the ingredients for the crust in a bowl and mix well. Season with salt and pepper.
3. Brush the top of each fish fillet with a little oil and divide the crust evenly between the two, pressing down well.
4. Place the fillets on a baking tray lined with foil and bake in the oven for 10 minutes or until the crust is cooked through and lightly browned.
5. Serve with wedges of lemon.
