Ingredients
675g / 1 ½ lb haddock fillets, skinned
1 onion, sliced
1 clove garlic, crushed
25g / 1oz butter
Marinade:
1 tbsp lemon juice
1 tsp honey
Salt and pepper
2 tsp curry powder
300ml / ½ pint natural yogurt
Generous pinch turmeric
1 tsp ground coriander
2 tsp grated fresh root ginger
Fresh coriander to garnish
Method
- Combine the marinade ingredients in a large bowl.
- Cut the fish into thick slices and put into the marinade. Cover with cling film and leave in the fridge for 1 hour.
- Gently cook the onion and garlic in the butter, then place in the base of a lightly buttered baking dish.
- Arrange the fish with its marinade over the onion, cover with a lid or foil and bake in a preheated oven, 180C, gas mark 4, for 30 minutes or until the fish is tender.
- Serve the fish garnished with chopped coriander. This dish goes well with rice.
