Tips ~For the wild mushrooms, use the dried porcini mushrooms from most supermarkets
Ingredients
50g / 2oz dried wild mushrooms, or 250g / 8oz fresh mushrooms, sliced
50g / 2oz plain flour
4 boneless chicken breasts, skinned
50g / 2oz butter
1 tablespoon olive oil
2 shallots, diced
2 garlic cloves, chopped
125ml / 4 floz white wine
125g / 4 oz mascarpone
Handful of snipped chives
Salt and pepper
Method
- If using the dried mushrooms, put them in a bowl and just cover with hot water. Leave to soak for 15 minutes.
- Season the flour with salt and pepper and toss the chicken in the flour to cover all over.
- Heat the butter and oil in a frying pan. Add the chicken and cook for 4 minutes on each side until coloured. Remove the chicken and keep warm.
- Add the shallots and garlic to the pan and fry over a low heat for 5 minutes. Add the wine and mix well to include any tasty brown bits from the pan.
- Add the mascarpone and the mushrooms to the pan, plus the soaking liquid if using dried mushrooms. Mix well to melt the mascarpone. If the mixture is very thin, turn up the heat to evaporate some of the liquid.
- Return the chicken to the pan and simmer gently for 10 minutes, turning from time to time. Finally stir in the chives, season to taste and serve with rice.
