Chicken Tagine

Tips ~


1 chicken, about 1.5 - 2.25kg (3 - 5lb), jointed and skinned, or about 6 large chicken breasts.

4 tbsp olive oil

4 cloves garlic, crushed

2 onions, chopped

2 tsp grated ginger

1 ½ - 2 tbsp coriander seeds, crushed

3 tsp cumin seeds, crushed

1 ½ tsp ground cinnamon

Salt and pepper

1 tbsp tomato puree

1kg / 2 ¼ lb nice ripe tomatoes, roughly chopped or 2 tins tomatoes

2 - 3 tbsp honey


  • Into a largesaucepan, add the olive oil, garlic, onions, ginger and the spices. Season with salt and pepper. Stir and then cook on a low heat with the lid on for about 10 minutes until the onions are soft.
  • Add the tomato paste, the chopped tomatoes and the honey and continue to cook, this time uncovered, until the tomato sauce is quite thick, about 20 minutes, stirring occasionally.
  • Season to taste, the flavour should be quite sweet and flowery.
  • Add the chicken to the pan, covering in the sauce and cook with the lid on, over a low heat for about 25 minutes until the chicken is cooked.
