Balti Chicken with Green Peppers

Tip ~ For a vegetarian version of this recipe, use a mixture of different vegetables i.e. butternut squash, potatoes, courgette, carrots and mushrooms, in place of the chicken.
Ingredients
6 tablespoons vegetable oil
1 onion, chopped
½ teaspoon ground tumeric
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon chilli powder
2 tablespoons water
750g / 1 ½ lb skinned, boned chicken, cubed
1kg/2lb tomatoes, chopped
1 large green pepper, deseeded and chopped
4-6 garlic cloves, crushed
2 fresh green chillies, deseeded and chopped
Salt
To garnish : 2 tomatoes, quartered
Fresh coriander, chopped
Method
- Heat the oil in a large heavy based pan, add the onion and fry until soft.
- Mix the tumeric, coriander, cumin and chilli powder with the water. Stir this spice mixture into the onions and cook until the liquid has evaporated, about 3-4 minutes.
- Add the chicken and fry for 4 - 5 minutes, then add the tomatoes and a pinch of salt to taste. Cover and cook for 15 minutes.
- Stir in the green pepper, garlic and chillies. Cook, uncovered, until all the tomato juices have evaporated and the chicken is cooked through.
- Serve hot garnished with the tomatoes and coriander.
