Tip ~ If you can't find chicken breasts with skin on, buy it without and cut a 'pocket' into the breast and stuff with the filling before cooking as per method below.
Ingredients
6 part boned chicken breasts
5cm / 2 in piece fresh root ginger, peeled and finely chopped
2 garlic cloves, crushed
1 stalk lemon grass, roughly chopped
2 red chillies, seeded and chopped
2 teaspoons ground turmeric
2 tablespoons chopped fresh coriander
6 spring onions, chopped
2 kaffir lime leaves, finely shredded or the finely grated zest of 1 lime
75g / 3oz creamed coconut
You will need: 6 cocktail sticks to secure parcels
Method
- Put the ginger, lemon grass, chillies, turmeric, coriander, spring onions, and lime leaves into a food processor and blend to a coarse paste.
- Melt the creamed coconut in a small pan, stir in the paste and leave to cool slightly until thickened but not set hard.
- Loosen the skin of each chicken breast with your fingers, leaving it still attached.
- Spread the paste over the breast meat, lift the skin back into place and secure the open edge with a cocktail stick.
- Barbecue the chicken over medium - hot coals for 25 minutes, turning regularly until the skin is crisp and golden.
- Remove the cocktail sticks before serving.
