Thai red Beef Curry

Tip ~ As this recipe has such a short cooking time, make sure you only use beef fillet, other cuts of beef would be too tough.
Ingredients
3 tablespoons oil
3 tablespoons Thai red curry paste
½ teaspoon ground coriander
½ teaspoon ground cumin
4 kaffir lime leaves, shredded
500g / 1 lb fillet of beef, cut into thin strips
400ml / 14floz coconut milk
2 tablespoons crunchy peanut butter
2 teaspoons Thai fish sauce
1 tablespoon soft brown sugar
Coriander to garnish
Method
- Heat the oil in a heavy based saucepan. Add the red curry paste, ground coriander and cumin and the lime leaves. Cook over a low heat, stirring frequently for 3 minutes.
- Add the beef strips to the pan, stir to coat them evenly in the curry paste and cook gently, stirring frequently for 5 minutes.
- Add half of the coconut milk to the pan, stir to combine and simmer gently for 4 minutes until most of the coconut milk has been absorbed.
- Stir in the remaining coconut milk with the peanut butter, fish sauce and sugar.
- Simmer gently for 5 minutes until the sauce is thick and the beef is tender.
- Garnish with the coriander and serve with Thai rice.
