Chinese Beef Stew

Tip ~Always wash your hands after preparingchillies as the natural oils in them, can cause irritation to your skin.
Ingredients
2 tablespoons oil
1 kg stewing beef cubed
1 tablespoon fresh ginger, grated
2 garlic cloves,crushed
1 red chilli, deseeded and chopped
500ml beef stock
1 tablespoon runny honey
2 tablespoon dark soy sauce
1 stalk lemongrass, crushed
2 teaspoons Chinese five spice powder
2 tablespoons rice wine or dry sherry
3 spring onions, sliced
Method
- Heat oil in a large heavy based pan.
- Add half the beef and fry for 5 minutes until golden brown. Remove from the pan and repeat with the remaining beef.
- Return the beef to the pan, add the ginger, garlic and chilli. Fry for a further 2 minutes.
- Add remaining ingredients, except spring onions.
- Add enough stock to cover the meat, bring to the boil. Lower heat, cover and simmer for 1 hour 30 minutes, until meat is tender.
- Take out the lemongrass. Add the spring onions, stir well.
- Serve with rice.
