Plum Fudge Puddings

Tips ~ These little plum fudge puddings can be prepared well in advance, then cooked just before serving.

Ingredients

50g unsalted butter

50g honey

2 tablespoons double cream

2 tablespoons soft brown sugar

1 teaspoon ground mixed spice

75g fresh white breadcrumbs

2 ripe plums, halved, stoned and thinly sliced

Crème fraiche to serve

 

You will need 4 ramekins, 150ml each

 

Method

  • Put the butter, honey and cream in a saucepan and heat until the butter is melted.  Put the sugar, spice and breadcrumbs in a bowl and stir well.
  • Divide half the buttery fudge mixture between the ramekins and top with a layer of plum slices and half the breadcrumb mixture.
  • Add another layer of plums and top with the remaining breadcrumbs.
  • Spoon over the remaining sauce.
  • Set on a baking sheet and bake in a preheated oven at 200C, 400F, Gas 6  for 20 minutes.
  • Remove from the oven and let cool for 5 minutes, then carefully unmould the puddings and serve with a spoonful of crème fraiche.
