Curried Rice and Raisin Salad

Tip ~

Ingredients:

225g / 8oz long grain rice

salt and black pepper

½ level teaspoon curry powder

2 tablespoons lemon juice

2 level tablespoons mango chutney

3 tablespoons olive oil

2 tablespoons seedless raisins

1 red pepper, seeded and finely chopped

 

Method:

  • Cook the rice in boiling salted water until it is tender, this will take approximately 8 - 10 minutes.
  • Drain the rice and turn the hot rice into a mixing bowl.
  • In a bowl combine the salt, pepper, curry powder, lemon juice, mango chutney and oil.
  • Add this dressing to the hot rice and fork through to mix. At first the mixture may seem rather moist but the hot rice will absorb the dressing as it cools.
  • Meanwhile cover the raisins with boiling water from the kettle and leave to stand for 5 minutes to plump them up.
  • When the rice is cool, add the raisins and red pepper. Stir well and serve.
