Ingredients
5floz / 150ml soured cream
2 tablespoons good mayonnaise
1 large or 2 small cloves garlic
1 teaspoon salt
1 rounded teaspoon mustard powder
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 ½ oz / 40g blue cheese, crumbled (Roquefort or Danish blue are best)
2 spring onions, finely chopped
Salt and pepper

Method
- Crush the garlic clove together with 1 teaspoon salt down to a creamy mass in a pestle and mortar, then add the mustard powder and work that in.
- Transfer to a bowl; add the lemon juice, vinegar and then the oil.
- In a separate bowl combine the soured cream and mayonnaise and gradually whisk into the dressing ingredients.
- When all thoroughly blended, add the spring onions and the crumbled blue cheese. Season with salt and pepper.
- The dressing is now ready to use and can be used to dress a salad
